Pokhindz & other traditional desserts making

Dessert making is a special ritual, when all family members are actively involved in the process led by the eldest – either by grandmother or grandfather. Commonly, in rural areas the family would light a fire outside, bring in wheat, sugar, butter and start making pokhindz or gata. This warm family tradition is commonly accompanied by folk dances and music. While you will be learning facts and history about the products, you can also challenge yourself to recognize and identify flavours in the dessert and some might surprise you.

Gata Baking

Gata is an Armenian sweet bread or pastry, baked in a tondir – underground clay oven. The main feature of gata that makes it so special is generated due to its main ingredient – khoriz. The latter is prepared from flour, clarified butter, sugar & much love. In addition to the spectacular taste the gata-eating process stands out because of another rural custom.

Commonly the cook will hide a coin inside gata before baking it and, whoever gets the piece with the coin in it, will have good luck and happy returns for the year ahead.

Motal Cheese Making

Motal

Motal is a white cheese of a goat flavored with wild herbs. This special type of cheese is prepared in hand made terra cotta pots sealed with beeswax ― a method that dates back to at least 5,000 years. Firstly, the raw cheese with absolutely no additives or chemicals is placed into salt water and left in the brine for approximately 40 days. It’s then taken out, crumbled by hand and mixed with herbs that grow along the local hillsides, such as dill and tarragon.

This cheese making service is provided in Martuni village. During 45 minutes you will have the chance to witness the whole process, which in fact takes at least 3-6 months.

Bees & Honey

Honey

During this tour, you will be taken to beekeepers with more than 35 years of experience in beekeeping and get acquainted with the methods they use for honey extraction in Armenia

They commonly harvest honey by collecting the honeycomb frames and scraping off the wax cap that bees make to seal off honey in each cell. The beekeepers will extract the honey, tell you stories from his experience, try to recall the alpine zones & flower diversity in the area followed by tea ritual with pure honey just extracted from cells.

Berry Picking

In recent years, an important activity of rural tourism in Dzoravank village is fruit-picking during seasons when fruits & berries ripen. During the season, the farmers will take you to their orchards or mountains for fruit-picking and fresh savoring. You will also have the chance to taste berries in all types and forms – jams, juices, fresh, dried and even pickled! The revenue derived from fruit-picking activities has gradually become an important component of local farmers’ incomes, meaning that through your activity you also contribute to development of rural settlements.

Pottery Master Class

Pottery is one of the oldest Armenian traditions, dating back to the 3rd millennia BC. Big vessels to carry water, preserve food and store wine were found in the ruins of ancient dwellings, often with etchings of deer, fish, trees, the sun and mythological creatures like dragons and serpents. During Soviet times many ancient traditions faded, due to rapid urbanization, but are now coming back, especially considering the medical benefits of pottery. This type of work improves motor skills and is useful for joints & hand muscles both for adults & children.

The art of tea harvesting has been developing and improving for centuries in Armenia.
